So, I was going to do another Mini Meal Prep Session yesterday. I only had an hour, but I had planned to make homemade granola bars, marinated chicken, and mac & cheese with browned ground beef.
Since we loved the Homemade Granola Bars I made recently, I got the ingredients so I could finally try my sister’s granola bar recipe that has been on the blog for years and so many of you have told me you’ve loved so much.
There were a lot of different things happening at our house when I was trying to cook and when I boiled the liquid ingredients on the stove, I accidentally let them boil for too long — which meant that it was too thick and dry to moisten the dry ingredients and make them into granola bars.
No problem, I thought, I’ll just whip up some more liquid ingredients into syrup. But it still wasn’t working and the clock was ticking and we needed to be out the door for dinner with our Community Group.
So I just decided to pour them into pans and see if they would happen to harden up enough while we were gone. Nope… they wouldn’t hold together almost at all, so I scrapped plan A and went to plan B: turning the granola bar mixture into granola!
I dumped it onto to two pans, spread it out, and baked it at 375 degrees for around 25 minutes. And would you know it? It worked and the end result was a delicious granola that Jesse was excited to use to top his yogurt and fruit with!
The funny this is that I had just been thinking I wanted to make homemade granola soon, since it’s been awhile since I’ve made it. Well, now I’ve made it!
But I still can’t officially say I’ve tried my sister’s granola bar recipe. 
Hoping to actually make that happen soon!
